Green Energy Salad

Ingredients:

Serves 1

  • 2 zucchini (courgette), grated
  • 2 tablespoons mint, chopped
  • 2 tablespoons corriander (cilantro), chopped
  • 1 generous handful baby spinach
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons roasted almonds, chopped

For the Dressing:

  • 1 tablespoon lemon juice or apple cider vinegar
  • 1/2 teaspoon Dijon Mustard
  • 2 tablespoons extra virgin olive oil
  • pinch of sea salt

 

Method:

  1. COMBINE salad ingredients into a serving bowl.
  2. MIX dressing ingredients and pour over the salad.
  3. ENJOY!

 

Notes and inspiration:

  • Add raw sauerkraut or kimchi for probiotic benefits.
  • Boost protein by adding 100 g of tofu, tuna or salmon.
