Ingredients:
Serves 1
- 2 zucchini (courgette), grated
- 2 tablespoons mint, chopped
- 2 tablespoons corriander (cilantro), chopped
- 1 generous handful baby spinach
- 2 tablespoons pumpkin seeds
- 2 tablespoons roasted almonds, chopped
For the Dressing:
- 1 tablespoon lemon juice or apple cider vinegar
- 1/2 teaspoon Dijon Mustard
- 2 tablespoons extra virgin olive oil
- pinch of sea salt
Method:
- COMBINE salad ingredients into a serving bowl.
- MIX dressing ingredients and pour over the salad.
- ENJOY!
Notes and inspiration:
- Add raw sauerkraut or kimchi for probiotic benefits.
- Boost protein by adding 100 g of tofu, tuna or salmon.
